Sake Facts:
Sake contains 80% water, and
natural spring water plays an important role in
brewing sake.
Sake
is made from steamed rice that has been polished to varying degrees:
Junmai Sakes are more rustic & traditional with more body & assertive flavors.
The rice is polished down to 70% of its original size.
Ginjo
premium sakes
are made using a slightly simpler process than
daiginjo
and using rice polished so that 60% remains.
Daiginjo
literally means
super premium. Brewed in a process
where less than 50% of the rice
grain's exterior
is polished away to reveal
its pure "starchy" heart, producing a light fruitiness and refreshing acidity
which sets off the flavor of mild raw fish and salads.
Delicate and complex, with
floral aromas and gentle, nutty flavors.
