Kiuchi Brewery was established in 1823 by Kiuchi Gihei, the village headman of Kounosu Naka-gun. The Kiuchi family collected rice as land tax and paid this rice to the Mito Tokugawa clan. This clan was one of the three main families of the Tokugawa Shogunate who ruled Japan from the 17th to the 19th centuries (EDO period).


 

 

 

Gekkakow - Vintage Junmai Daiginjo-shu Sake is a prestigious 2002 vintage sake brewed from Yamada Nishiki rice polished down to 35%. Cold matured for over three years.
Voted best Daiginjo in America.
Bright pineapple-coconut scent with licorice nuances. Fine, silky entry with salt-watery flow, rounded fullness in the middle, and a mouth watering, nectarine finish tinged with a whispering sweetness.

Kurashizuku - Kura means sake-brewery, and Shizuku is the first run of sake. Kurashizuku's flavor, color and fragrance are enriched by the careful first steaming and pressing of its rice.

Often called "antique" sake, Kurashizuku is Usu-Nigori, sake that has some sake yeast, rice and koji in the bottle while the bulk remains behind on the filtering cloth as Sake-Kasu cake.

"Asamurasaki "Morning Purple Red Rice Sake" by Kiuchi Sakery Japan, this is a sake made from red rice and is in fact, a red sake with an unusual taste.

Red rice was cultured in ancient times and is hardly used any more. This very unique sake is naturally red in color and slightly sweet with some definite berry-like aromas and flavours and has a slight "spritz" to the mouthfeel.

Tarusake was matured slowly in real Akita cedar barrels producing subtle aromas and flavors of cedar. This unique sake has some sweetness initially with some pepper notes, a little bitterness and some detectable wood.

Sake Facts:

Sake contains 80% water, and natural spring water plays an important role in brewing sake.

Sake is made from steamed rice that has been polished to varying degrees:

Junmai sakes are more rustic & traditional with more body & assertive flavors.
The rice is polished down to 70% of its original size.

Ginjo premium sakes are made using a slightly simpler process than daiginjo
and using rice polished so that 60% remains.

Daiginjo literally means super premium. Brewed in a process where less than 50% of the rice grain's exterior
 is polished away to reveal its pure "starchy" heart, producing a light fruitiness and refreshing acidity
 which sets off the flavor of mild raw fish and salads.  Delicate and complex, with floral aromas and gentle, nutty flavors.
