KIUCHI BREWERY
was established in 1823 by Kiuchi Gihei, the village headman of Kounosu Naka-gun.
The Kiuchi family collected rice as land tax and paid this rice to the Mito Tokugawa clan.
This clan was one of the three main families of the Tokugawa Shogunate who ruled Japan from the 17th to the 19th centuries (EDO period).

Sake Facts:

Sake contains 80% water, and natural spring water plays an important role in brewing sake.

Sake is made from steamed rice that has been polished to varying degrees:

Junmai Sakes are more rustic & traditional with more body & assertive flavors.
The rice is polished down to 70% of its original size.

Ginjo premium sakes are made using a slightly simpler process than daiginjo
and using rice polished so that 60% remains.

Daiginjo literally means super premium. Brewed in a process where less than 50% of the rice grain's exterior
is polished away to reveal its pure "starchy" heart, producing a light fruitiness and refreshing acidity
which sets off the flavor of mild raw fish and salads.  Delicate and complex, with floral aromas and gentle, nutty flavors.
