This appealing wine shows lovely pale strawberry color, complex aromas and pure flavors, finishing with soft effervescence and nice nuances of toast and minerals.
 

BUBBLIES SERVING SUGGESTIONS

Chill to 45 degrees in fridge for 3 hours or in a bucket with 50/50 water and ice for 20 minutes. Don’t use just ice, since the water/ice combo better envelopes the bottle. Don’t chill bubbly in the freezer since it will explode as the liquid expands.

Uncork by holding the bottle by its neck, away from your body. Gently tilt the bottle to relieve pressure on cork. Loosen wire muzzle, foil and cork all at once by twisting the bottle (not the cork), until cork slides out noiselessly – about 6 turns.

Use flutes, not saucer-shaped glasses, so the column of tiny bubbles can rise steadily, and aroma is preserved.

Fill glasses two-thirds full.
